I found this.........I haven't tried it, yet.......
Ingredients Potatoes Carrots Onion Salt and pepper One raccoon note: you can put in your favorite leaf spice Directions Cleaned raccoon remove all fat, cut up Put in large pot with water to cover raccoon add salt, Bring to boil and simmer until tender. Remove meat from pan and put in baking dish, Add onion, carrots, cut up potatoes salt and pepper to taste Pour tomato juice over top of every thing cover and Bake at 350 oven for one hour or until veggies are done.

After you boil the meat and remove from pan shred your meat up and cover with your favorite bbq sauce throw it all in the crock pot for a couple hours on low with a little water and a chopped onion. Good stuff!

Actually our daughter and grandsons went to Arkansas for Thanksgiving and they served coon.
Daughter said it was shredded and had BBQ sauce on it. She didn't eat it, but 1 grandson said it was really good, apparently he ate several helpings

I would be suspicious of the origin of any "coon" served up down south. Especially with bar-be-que sauce. Anyone see Fried Green Tomatoes?

Hmm, all my recipes say to wrap in bacon. Of course, my recipe for bacon says to wrap in bacon.

Never had coon, but heard its amazing.. I dont think Im willing to give it a try though!

It's hard for me to eat Coon. I had one as a pet growing up....Loved that little thing. However having coon dogs and coons in the same proximete is not a good combo....
